Built around a single hinoki counter in a room designed to shut out everything else. The technique is traditional Edomae and the pace is slow on purpose.
There is a smaller, cheaper room upstairs if the main counter is out of reach. Quiet in a way most expensive New York restaurants forgot how to be.
